I'd check the passenger footwell carpet for damp first, a leaking heater matrix can lose coolant without anything dripping on the ground. A tired expansion tank cap can also let it slowly vent off.

Most garages can pressure test the system pretty cheap to find it. Does it smell sweet inside the car at all?
